Austen and I were roaming Oxford Street, in Paddington, when we found T2T, a tea house. I was so excited because I have been meaning to get back into tea. I used to work in a tea room when I was in high school. It was called the Posh Peasant. There were over 100 different kinds of loose tea, and I really enjoyed learning and drinking them. It’s summer here so I had a fun idea to make homemade iced tea that would last all week.

- 1. Go to a tea shop and take your time. Usually they will have tea for you to sample and you can request to smell them all! I can’t promise the staff wont be annoyed with you, but I do promise that you will smell many wonderful and delicious scents. Some are surprising- how can strawberry & cream tea smell exactly like it tastes?!? (ya, I know those two senses are linked- but seriously!). It will make your mouth water. And it’s fun.
- 2. I found a really inexpensive loose-tea pot at Ikea. But you can purchase this sort of thing at a lot of places.
- 3. Bring a pot of water to a boil on the stove. Roughly 1-1.5 cups of water per teaspoon of loose tea.
- 4. Once water boils, pour over loose tea.
- 5. Let tea steep. Steeping loose tea is slightly different than a tea bag. Loose tea is stronger and it doesn’t take as long to get the flavor and medicinal value out of the leaves. See my steep time chart for tea types and steep time!***note*** if you steep loose tea too long, your tea will have a bitter flavor.
- 6. After your tea is finished steeping, take out leaves. If you would like to infuse your tea with fruit, herbs, or sweetener, now is the time.
- 7. I added passion fruit and let it soak in the fridge over night.
- 8. The next morning I poured the passion-infused tea into my reusable glass bottle.
